TBT: SALSA 'ing THE DAY AWAY


TBT: Every August the End of the Rainbow Valley dedicates a day to salsa'ing the day away. Music is part of my daily routine and why Jazzercise's variety of music is so fun. It's also probably my only opportunity to practice my 'Salsa' moves.

The Spanish word 'salsa' translates sauce/ saucy. If you have ever seen salsa performed it has a lot of hip movement and when done correctly can get 'hot', steamy' in fact.  Monday,  our kitchen hood had to work overtime taking care of extra steam as it was tomato steam not human steam. Our tomatoes were becoming salsa, 'hot' sauce.

It was an all day affair... Opting to just roast the chiles, every thing else just went into the blender. Roma tomatoes are a less juicy tomato variety but it still takes a good half day to cook down the sauce with a lot of stirring. 

Every year our SALSA tastes different due to its chile heat which is not so predictable. We'd rather err on the side of caution but it's always an unknown as to how 'hot' spicy it will become and we can always add more heat. This year it was more of a guessing game as our neighbor had shared a variety of his homegrown chile plants. 

At the end of the day we had canned 22 pints of homegrown red salsa.
