EASY PEASY

Last week here in our neck of the woods I tried 3 new recipes. All received a thumbs up but when asked his favorite, Natureman did not hesitate to choose the Thai  Turkey* Lettuce Cups from Cooking Light from their other 20 minute main meals.



*Substitutions began at the beginning as I had chicken on hand, not ground turkey and rather than a cucumber and carrot I had a small bag of broccolini.

INGREDIENTS:
  • 3 T olive oil *, divided
  • 3 T reduced-sodium soy sauce
  • 2 T light brown sugar
  • 2 T rice vinegar
  • 1 lb ground turkey/chicken
  • 12 butter lettuce leaves
  • 1 1/2 c chopped brocolini ( had slivered carrots in bag)
Step 1
Combine 2 T oil, soy sauce, sugar, and vinegar in bowl, whisk.
Step 2
Heat remaining 1 T oil in a large nonstick skillet over medium heat
Saute brocolini just to warm. 
Move to separate plate. 
Add meat to skillet; cook 7 minutes / until browned. 
Add 1/4 c soy sauce mixture; cook 4 minutes until liquid absorbed.
Step 3
Place heaping serving of brocolini atop each lettuce leaf.
Then 3 T meat mixture on each .
Top with peanuts. 
Drizzle evenly with remaining soy sauce mixture. 
Sprinkle with mint.
Voila!  3 lettuce cups/person
YUM!
